Ensure quality levels of kitchen production and presentation is maintained at its highest level.
Ensure all mise- en place is correctly prepared prior to commencing of service.
Ensure that equipment is cleaned according to the stipulated cleaning schedule.
Train and motivate all subordinates to ensure kitchen standards are maintained.
